Tasting Notes: A perfect blend of tradition and innovation greets the nose of our new Sangiovese. Rich red fruits accompany aromas of sun-kissed cherries and plump strawberries, while delicate floral notes of violet and dried rose petals mingle with hints of Tuscan herbs like oregano and thyme to add depth and complexity. Light hints of cedar and vanilla from well-integrated oak barrels round out this playful yet serious wine.

Pairing: Classic Italian dishes are a go-to for this homage to the Tuscan style! Margherita pizza, grilled herb-rubbed chicken, mushroom risotto or any red sauce pasta will pair wonderfully with this Sangiovese.

Winemaking: The grapes are farmed CCOF certified organic and were hand-harvested at 21.6 degrees brix. 15% of the fruit was left whole cluster to contribute structure and tannin. The fermenting must was pumped-over 3 times near the beginning of fermentation and punched down for all other cap management. The wine was pressed off after 16 days of maceration, and barreled down to complete malolactic in the cellar. There is 12% new french oak used in the aging process, with the style of Chianti Classico in mind. The wine was bottled unfined and unfiltered.
