Founded by CIA-trained chef Kaitlynn Bauman, Norcina blends rustic Italian tradition with California flair in a chic, casual Marina setting. The name — Italian slang for a female pig butcher — reflects a menu built on artisanal craft and neighborhood warmth.
The Menu
Seasonal Italian-inspired plates: house-made pastas like Black Pepper Bucatini and Pappardelle al Ragù alongside wood-fired 'ZA' like the Porky Pepperoni and Funky Funghi with arugula pesto. Calabrian Wings with gorgonzola dolce are a signature.
What we'd pour here
Pappardelle al Ragù and Porky Pepperoni call for the Venturi Sangiovese — bright acid and dried-herb lift. For the Funky Funghi and Calabrian heat, the Albariño Amber VDS brings skin-contact texture that hugs umami and spice.
