Unfiltered and Unfined: Why Clarity Is Overrated

Unfiltered wine is wine that has not been passed through a filter to strip out particles before bottling; unfined wine has not had a fining agent added to pull out proteins and tannins for a clearer, softer result. Skipping either step is safe. Any haze or sediment you see is harmless, and both are common in the way wine looked before industrial clarification became standard.

Clarity became the default expectation for wine mostly because it looks clean on a shelf, not because it makes wine taste better. Here is what fining and filtering actually do, and why leaving them out is a legitimate choice, not a shortcut.

What is fining, exactly?

Fining is the process of adding a substance to a barrel or tank that binds to unwanted particles, mostly proteins, tannins, and pigments, so they clump together and sink or rise out of the wine. The most common fining agents are:

  • Bentonite, a clay mined mostly in Wyoming, used mainly in white wines to remove heat-unstable proteins that could otherwise cause haze later.
  • Egg whites (albumin), used in reds to soften harsh tannins by binding to them and dropping them out.
  • Isinglass, a collagen preparation traditionally made from sturgeon swim bladders, used for a gentle clarifying effect with less impact on body than some alternatives.

Other agents exist too, including gelatin, casein (a milk protein), and PVPP, a synthetic polymer used mostly to prevent browning in whites. Each does a slightly different job, but they all work by grabbing onto something in the wine and removing it.

Why do vegans care about fining?

Bentonite and PVPP are mineral or synthetic, but egg whites, isinglass, gelatin, and casein are animal-derived. The fining agent itself is removed from the wine along with whatever it bound to, so almost none of it remains in the finished bottle, but the wine still touched an animal product during production. That is enough for many vegans to avoid wines fined with these agents, and it is one of the more concrete, practical reasons people look for unfined wine specifically, separate from any interest in flavor or texture. Wineries are not required to disclose fining agents on U.S. labels, since they are considered processing aids rather than ingredients, which is part of why full ingredient transparency matters to us.

What is filtering, and how is it different from fining?

Filtering is mechanical. The wine is passed through a filter medium, ranging from a loose pad that catches only large particles to a tight membrane fine enough to strip out yeast cells and bacteria before bottling. Fining removes specific dissolved and suspended compounds through a chemical or physical binding reaction. Filtering removes physical particles by size, regardless of what they are. Many conventional wines go through both: fining first to address specific compounds, then filtering to polish clarity and ensure microbial stability.

What does skipping fining and filtering preserve?

Every particle removed by fining or filtering was part of the wine's texture and aromatic makeup. Tight filtration in particular can strip out some of the compounds that carry aroma and mouthfeel, along with the yeast and bacterial cells that carry no flavor risk but do carry some textural weight. Winemakers who skip these steps are betting that what gets left behind, the fuller mid-palate, the slight grip, the layered aromatics, is worth more than a guaranteed-bright appearance in the glass. It is a real tradeoff, not a marketing story. You gain texture and complexity, and you accept some visual imperfection and slightly more bottle variation as the cost.

Why is cloudy wine or sediment not a flaw?

Sediment in red wine is mostly precipitated tannins and pigments that were always part of the grape and the fermentation, they just did not get removed. Haze in unfiltered whites, pét-nats, and orange wines usually comes from proteins, yeast cells, or fine lees that settled slowly or never fully dropped out. Neither indicates spoilage. Spoilage has its own tells: a sharp vinegar smell (excessive volatile acidity), a wet-cardboard note (cork taint, unrelated to filtering), or a flat, dull sherry-like character from oxidation. A wine that just looks a little cloudy or has sediment in the bottom of the bottle is behaving exactly as an unfiltered wine should.

This is also where reputations get muddled. Unfiltered is one practice within the broader low-intervention approach, not a synonym for it, and it does not automatically mean a wine is funky or flawed. We cover that distinction more fully in what is natural wine.

How should you serve or decant unfiltered wine?

A few practical habits handle sediment and haze without much effort:

  1. Stand the bottle upright for a day before opening, especially for reds with visible sediment. This lets particles settle to the bottom rather than staying suspended.
  2. Decant slowly, pouring in one continuous motion and stopping before the last inch or so in the bottle, where sediment collects.
  3. Don't panic about haze in whites or orange wines. A gentle swirl redistributes it, and it will not affect safety or, in most cases, noticeably change the flavor.
  4. Serve at the right temperature. Unfiltered wines, particularly reds with more texture, often show better with a slight chill taken off compared to how you'd serve a heavily processed, lighter-bodied wine.

None of this requires special equipment. A steady hand and a little patience is really all unfiltered wine asks of you.

Is unfiltered wine safe to drink? Yes. Sediment and haze in unfiltered wine are made up of harmless natural compounds, mostly tannins, pigments, proteins, and yeast cells. They pose no health risk and are not a sign of spoilage.

Does unfiltered wine taste different from filtered wine? Often, yes. Unfiltered wines tend to show more texture, weight, and aromatic complexity, since compounds that would otherwise be stripped out remain in the glass. The difference is usually more noticeable in mouthfeel than in basic flavor.

Why do some wineries fine or filter at all if it removes flavor compounds? Fining and filtering solve real problems: consistent clarity across every bottle, microbial stability for wines that will travel or sit on shelves for a long time, and softer tannins in reds that might otherwise taste harsh young. They are legitimate tools, just tools with tradeoffs.

How do I know if a wine is unfined for vegan reasons? Check the back label if the producer lists ingredients or processing aids. If it is not listed, look for "unfined," "vegan," or a full ingredient disclosure from the winery, since fining agents are not required to appear on U.S. wine labels.

Should I decant every unfiltered wine? Not necessarily, but it helps with reds that show visible sediment. Standing the bottle upright beforehand and pouring slowly usually solves any concern without extra equipment.
