Tasting Notes: The nose on this wine immediately takes you to the Atlantic-influenced vineyards of Spain's Rías Baixas region. White peaches and juicy nectarines are front and center, and envelop the senses in their ripe, sun-kissed sweetness. Delicate floral notes of orange blossom intertwine with hints of salty sea breeze, while subtle hints of lime zest and green apple add brightness to the mineral undertones.

Pairing: From grilled halibut to oysters and summer salads, this wine elevates any crisp and bright dishes. The Albari ño’s bright acidity complements to delicate seafood, making it a perfect pairing. The aromatics of this wine also make it perfect partner to bright and showcase the delightful interplay of tropical fruit flavors and minerality; or a summer salad with arugula, strawberries, and goat cheese, offering a refreshing balance of peppery greens, juicy fruit, and creamy cheese, all enhanced by the wine's vibrant citrus notes. These pairings celebrate the wine's versatility and ability to elevate a range of culinary experiences.

Winemaking: The grapes are CCOF certified organic and were hand-harvested, whole cluster pressed and cold-settled for 96 hours. After being racked from the heavy solids that settled at the bottom of the tank, the must was fermented at 62 degrees fahrenheit. The lot completed malolactic after being barreled down in our 1980’s Coca Cola drums. It then was aged on the lees for 5 months before bottling. The wine is filtered pre-bottling as it is bottled early to keep freshness. There is not enough time to allow the wine to settle effectively without filtration.
