What Is Actually in Your Wine? A Guide to Additives

More than 60 additives and processing aids are legal in US winemaking, and you'd have almost no way of knowing which ones are in your bottle. That's not a conspiracy. It's just how wine has always been regulated in this country: unlike a box of cereal, a bottle of wine has historically been exempt from ingredient labeling. Most of what's legal is unremarkable, some of it is more invasive than people realize, and almost none of it has to be disclosed.

Here's what's actually allowed, what it does, and why we list every ingredient on our own back labels anyway.

Why Doesn't Wine Have an Ingredients List?

In the US, wine over 7% alcohol is regulated by the Alcohol and Tobacco Tax and Trade Bureau (TTB), not the FDA, and TTB has never required a full ingredient list on wine labels (Wine Spectator). The label has to state alcohol by volume, and it has to disclose a small number of specific things (sulfites at 10 ppm or above, and certain dyes like FD&C Yellow No. 5 or cochineal extract), but beyond that, wineries are not obligated to tell you what went into the bottle (TTB).

This isn't unique to small producers or big ones. It applies across the industry. If a winery chooses to list ingredients voluntarily, current guidance is that it must list all of them, not a hand-picked subset (Ridge Vineyards), but very few choose to.

The rest of the world is starting to move in a different direction. As of December 2023, the European Union requires wine sold in its market to carry a full ingredient list and nutrition declaration, either directly on the label or accessible through a QR code (an "e-label") (European Commission, Wine Institute). US regulators have discussed similar rulemaking on ingredients, allergens, and nutrition content, but as of now nothing has been finalized (Wine Spectator).

What's Actually Legal to Add to Wine?

The TTB maintains a list of materials authorized for the treatment of wine and juice, and it runs to more than 60 items (27 CFR 24.246). Most of it falls into a few practical categories.

Fermentation basics. Cultured yeast is standard in most commercial wine, selected and added to guarantee a clean, predictable fermentation rather than leaving it to whatever yeast populations happen to be present on the fruit or in the cellar. Yeast nutrients, like diammonium phosphate, are added alongside it to keep fermentation running smoothly and avoid stuck or sluggish ferments.

Acid and sugar adjustments. Tartaric acid, the same acid naturally present in grapes, is commonly added to correct low acidity, especially in warm-climate fruit. Sugar can be added before fermentation to raise potential alcohol, a practice called chaptalization. It's legal in many US states, though notably prohibited in California, Oregon, and Washington (SOMM&SOMM).

Color and texture. This is where things get more invasive. Mega Purple, an intensely concentrated grape-derived coloring and sweetening agent (roughly a 2,000-to-1 concentrate), is used to deepen color and round out perceived sweetness in some red wines. It doesn't have to be disclosed. Oak alternatives, oak chips, staves, or powder, and even oak flavor extracts, let a winery add oak character without the time and cost of actual barrel aging.

Fining agents. These are used to clarify wine and remove unwanted particles, tannin harshness, or off flavors. Common ones include bentonite (a clay), isinglass (derived from fish), egg white (albumen), and casein (a milk protein). Fining agents are technically processing aids, meaning they're used and then removed before bottling, so they generally aren't required on any label even where allergen concerns exist, though the EU's new rules do require disclosure of egg- or milk-derived fining residues above a small threshold (QRFox).

Filtration and stabilization. Sterile filtration removes yeast and bacteria before bottling to prevent unwanted fermentation in the bottle or spoilage in transit. It's a mechanical process rather than an added substance, but it does strip texture and some flavor compounds along with the microbes.

None of this makes a wine bad. Most of these tools exist because winemaking at any real scale is hard to do consistently without them, and many, like tartaric acid or egg white fining, have been used for a very long time. But the list is long, some of it (Mega Purple and heavy oak-flavoring especially) exists mainly to standardize flavor or disguise thinner fruit, and almost none of it reaches the label.

Does This Mean Big Wine Is Hiding Something?

Not exactly, and it's worth being fair here. Most of what's on the TTB's authorized list is mundane: things like nitrogen gas to prevent oxidation during bottling, or calcium carbonate to reduce excess acidity in a high-acid vintage. These aren't villains. They're tools, and plenty of well-made, honestly produced wine uses several of them without anything to hide.

The real issue is not any single additive. It's that consumers have no way to tell which wines rely heavily on these tools and which don't, because nothing requires disclosure either way. A bottle assembled with cultured yeast, added tannin, oak flavoring, and Mega Purple looks identical on the shelf to one made simply from grapes, native yeast, and a little sulfur. That gap between what's allowed and what's disclosed is the actual problem, not the existence of any particular additive.

What Does Coteau Pavot Do Differently?

We're not going to tell you every additive on that TTB list is dangerous, because that wouldn't be honest, and most of it isn't. What we will say is that drinkers deserve to know what they're pouring, so we list every ingredient on our back label voluntarily: the grapes, the yeast (native, not a commercial strain we've selected off a catalog), any malolactic bacteria where it's used, and the minimal sulfur we add to get the wine safely to bottle. Nothing hidden. Nothing filtered.

That transparency starts in the vineyard, where we source exclusively from organic growers, and continues in the cellar, where minimal intervention means we're not reaching for Mega Purple, added tannin, or oak flavoring to shape a wine that didn't get there on its own. We keep additions minimal and disclose everything we do use on the back label of every bottle, including yeast, any malolactic bacteria, and the sulfur dioxide needed to stabilize the wine. We don't use things like Mega Purple, added tannin, or oak flavoring.
